We had our Christmas supper on Christmas Eve this year, a first for our family (we usually do Christmas day). And now we’re watching a Christmas movie together as we digest all the delicious food… mmmm. So I’m blogging (I am incapable of doing only one thing at a time! Lol).
Today’s healthy recipe:
CREAMY MASHED POTATOES CAULIFLOWER!
I don’t like white potatoes, but my dad does and requested mashed potatoes to go with our turkey supper tonight. And I have to admit creamy, buttery mashed potatoes sure do taste good mixed with gravy and cranberry sauce on a moist bite of roast turkey…! But white potatoes are high in starch (complex carbohydrate) and as a result give a high glycemic load and insulin spike. That’s why this recipe is so amazing…. it tastes IDENTICAL (even my potato-loving father loved it!) to mashed potatoes, but it is low carb and low calorie.
Cauliflower: 4.11g per 100g serving
White potato: 20.01g per 100g serving
- 1 head of cauliflower
- 1 pinch salt
- 1 pinch ground black pepper
- 1 pinch garlic powder
- 1 tbsp butter
- Wash and dry cauliflower. Chop roughly into large chunks.
- Steam until tender.
- Remove from steamer and allow steam to evaporate to minimize the liquid on the cauliflower (otherwise the mash will be runny).
- Place all ingredients in food processor and process on high until completely smooth.
