Stove Top One-Pot Chicken Veggie Bake

  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 medium yellow onion, chopped
  • 1-2 yellow/orange/red peppers
  • 1/2 head kale
  • 2 skinless, boneless chicken breasts
  • salt & pepper




  1. Heat the oil on medium-high heat. Place chicken breasts in oil, allow to brown on one side (approx 2-3 minutes). Then turn and brown on the other side (another 2-3 minutes).
  2. Turn down the heat to medium-low, and add onions, garlic and peppers. Cover with a lid and let bake for 10 minutes.
  3. Remove lid, stir vegetables. Add kale. Re-place lid and cook another 10-15 minutes or until chicken breasts are cooked through (but not dry!). *The key to maintaining the moisture is to cook with the lid on, minimizing how much you open the lid, and cooking only until the chicken breast is cooked through but no longer!
  4. Remove from heat. Season with salt & pepper. Use two forks to pull the chicken apart into bite sized pieces.
  5. Serving suggestions: sprinkle with crumbled goat cheese, sliced avocado, and fresh alfalfa sprouts. So good and very filling!
