Vanilla Peanut Butter Protein Mugcake [low-carb, high-protein, gluten-free]
- 2 tbsp almond meal
- 1 tbsp vanilla whey isolate protein powder
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 tbsp natural peanut butter or PB2
- 1 whole egg
- 1 egg white
- 1 tbsp milk
- Mix all ingredients in blender.
- Pour into mug.
- Microwave 1-2 minutes (watch carefully because it may overflow, and don’t overcook or it will be dry!)
- Top with optional add-ons like cacao nibs, hemp hearts, 1/2 sliced banana, 100% maple syrup (watch your portion size because of the calories and sugar!)
